Saffron Moong Dal Halwa recipe

Moong Dal Halwa Recipe:

Moong Dal Halwa is a famous Indian dessert made using moong dal and flavored with ghee, saffron, and cardamom.
Here’s how to make perfect moong dal halwa which is a classic recipe that melts in your mouth and treats you as a delicious dessert.

Ingredients:
1 Cup Moong Dal
1 Cup Water + to soak 25-30
Kesari Saffron Strands+ for garnish
1 Cup Sugar
1 Cup Ghee
1 Tbsp Sooji
1 Tbsp Besan
⅛ Tsp Cardamom Powder
2 Tbsp Chopped Nuts + for garnish

Preparation:

In a bowl, add moong dal along with water and soak overnight.

Drain the dal and add to a blender. Blend for a couple of seconds to form a coarse paste. Keep aside.

In a saucepan, add 1 cup water and bring to the boil. Transfer 1 ladle of the boiling water to a small bowl, add saffron and let it infuse for 5 minutes. Add the infused saffron water back to the boiling water along with sugar. Mix well once the sugar has dissolved.

Cook the sugar-water mix for 5-7 minutes until syrupy. Keep aside.

In a deep non-stick pan, heat ghee over medium-low heat and add sooji and besan. Cook for a minute and add the ground moong dal. Cook for 20-30 minutes while stirring continuously until a sand-like texture is formed.

Ingredients

½ Litre Full Fat Milk

1 Pinch

Kesari Saffron Powder

1/8 Tsp Cardamom Powder

½ Cup + 1 Tbsp Sugar

250 ml Water

2 Bread Slices

Ghee, for frying

Chopped Nuts, for garnish

Saffron Strands, for garnish

Silver Leaf, for garnish

Preparation:

In a deep non-stick pan, add milk and bring to the boil. Once the milk starts boiling, take out a ladle full of the hot milk into a small bowl and add saffron powder. Mix well and add back to the boiling milk.

Reduce the heat to low, add sugar and cardamom powder. Mix well and continue to simmer for 1 hour 45 minutes or until thick, while stirring in between.

Once the rabri reaches the desired consistency, take it off the heat and keep aside.

In another non-stick pan, add remaining ½ cup sugar along with water. Bring to the boil and cook for 7-8 minutes until syrupy. Keep aside.

In another pan, heat ghee over medium heat. Add 1 bread slice to the hot ghee and fry for a minute per side until golden brown and crisp. Transfer to the reserved sugar syrup, soak for a minute and transfer to a serving plate.

Top the soaked bread slice with rabri, garnish with chopped nuts, saffron and silver leaf. Repeat with remaining bread and rabri. Serve warm.

Preparation:

In a hand blender jar or hand blender, add diced mango and blend into a puree. Keep aside.

In a bowl, add hung curd and powdered sugar. Whisk well.

Add warm water to a small bowl and add saffron powder. Mix well and add to the hung curd mix along with mango puree. Mix well and transfer to serving bowls.

Garnish the shrikhand with chopped nuts and saffron and serve chilled.

Preparation:
In a deep non-stick pan, add milk and bring to the boil. Transfer a ladle of the boiling milk to a small bowl, add saffron and let it infuse for 5 minutes. Transfer the saffron milk back to the boiling milk.

Add almonds, cashews, and pistachios. Mix well and cook for 30 minutes while stirring in between.

Add sugar and cardamom powder. Mix well and cook for 50 minutes to 1 hour until most of the liquid has evaporated and the milk has become thick.

Add 2 ladles of the pancake batter to a hot flat pan and cook for 3-4 minutes per side and remove on a plate. Repeat with remaining batter.
